After a sell-out winter course, renowned chef Christian Puglisi will be returning to The Thinking Traveller’s villa Rocca delle Tre Contrade in Sicily in spring. From 25 April – 2 May 2020, Puglisi will be hosting a full-immersion experience for gastronomes and keen amateur cooks.

Puglisi worked in the kitchens of El Bulli and Noma before setting up his own restaurant, Relæ, in Copenhagen, in 2010 which was the first Michelin-starred restaurant to be certified organic. Relæ is currently ranked among the 100 best restaurants in the world. With Sicilian roots, Puglisi will be realising his dream to cook professionally in the land of his culinary heritage.

During the course, guests will be able to immerse themselves in Sicilian food culture through a series of dedicated hands-on workshops under the guidance of Puglisi, his team from Relæ, and the in-house villa kitchen team. The programme includes masterclasses on sourdough and bread-making, cheese-making, raw seafood, charcuterie and low intervention wines.

One unique experience will include a meeting with the pioneering farmer who saved the rare Nebrodi black pig and brought it back from extinction. Guests will be able to take part in the lemon harvest, go foraging, taste Sicilian street food, and learn about vermouth preparation. An introduction to the most well-known traditional Sicilian recipes will add a further dimension to this Sicilian adventure.

Guests will stay at the 12-bedroomed Rocca delle Tre Contrade, which occupies a stunning panoramic position on Sicily’s east coast with views of Mount Etna and the sparkling Ionian Sea. The villa features an impressive demonstration kitchen and its grounds boast lemon groves, fruit orchards and vegetable gardens, as well as a spectacular infinity pool, tennis court and spa area.

“We are extremely proud to have Christian with us here in Sicily for this extraordinary and unique week-long workshop. We have a shared vision about authentic, local ingredients, pure flavours and low intervention wines, and are looking forward to experiencing it first-hand.” says Jon Moslet, owner of Rocca delle Tre Contrade.

The one-week course is bookable exclusively through The Thinking Traveller and costs from €5,950 per person (based on two sharing) including all meals, accommodation and transfers. (www.thethinkingtraveller.com/puglisi
