Now is the season to harvest nature’s culinary treasure, as the fertile, protected lakes around Shanghai bear forth the ultimate in savoury Chinese cuisine – the Shanghai hairy crab.

As Shanghai welcomes the return of its most famously succulent seasonal delicacy, Four Seasons Hotel Shanghai is elevating this ultimate tasty treat to new heights, with clever fusions alongside authentic local recipes.

Until December 31, 2019, Si Ji Xuan is introducing a new crab menu for guests to taste the fresh and rich flavours of hairy crab from Yangcheng Lake.

Wayne Wang, Head Chef of Si Ji Xuan Chinese restaurant, has nearly 30 years of experience in Chinese cuisine. “Before we launch the crab menu,” says Chef Wayne, “It’s vital to visit Yangcheng Lake and speak to the farmers. We only select the best crab for our guests.”

Yangcheng Lake is located in Jiangsu Province. Its superb water quality and natural, untouched environment provides the right place for crabs to grow. The hairy crabs from Yangcheng Lake have unique characters such as “green shell, white belly, golden claws and yellow hair” as introduced by Chef Wayne. “The crab feast is served in an a la carte menu that includes four cold dishes and six hot dishes. Whatever cooking method you prefer: steamed, stir-fried and marinated or soup, you can find a variety of tastes that you prefer.”

Si Ji Xuan also offers crab cracking services for guests’ convenience.

Highlighted Dishes

  • Puer Tea Jelly with Crab Meat – An appetiser of four petite jelly crabs with an aroma of Puer tea and crab meat that brings a savoury yet bitter taste to give a fresh feeling.
  • Sautéed Sheet Jelly with Crab Meat – This is a very traditional Shanghai crab dish. It mixes the tender crab meat together with sheet jelly that makes the most of the crab flavour.
  • Marinated Hairy Crab in Rice Wine – This signature crab dish soaks the steamed crab into a specially made seasoning with Chinese rice wine, plum and 20 different sauces. It leaves a long lasting wine aroma on the fingers and might become a new favourite!

The Crab Feast Menu is available through December 31, 2019. Lunch is offered from 11:30 am to 2:30 pm, and dinner from 5:30 to 10:00 pm.
