As part of the Top 52 Restaurants and Bars in Asia Pacific by Marriott Bonvoy, the chef-hatted Silvester’s Restaurant will be transformed into a Gatsby-themed culinary wonderland like no other. The one-night-only event on the 13th of September 2019 (Friday) will comprise of interactive stations, artistic creations, exclusive dessert unveilings, live vocalists, wine towers, and more.

A nod to the Silvester’s brothers The stand-up, cocktail-style affair will be a nod to the Silvester’s Brothers – one of Sydney’s most renowned butchers and providore from the 1920s who once occupied this very space. Patrons are encouraged to be accoutered in their finest Gatsby attire as they explore the juxtaposition of the old and new Silvester’s – contemporary, experimental culinary offerings with prohibition-era theming and theatrics.

The culinary offering Michelin Star-trained chef, Raphael Szurek, will be crafting a truly immersive experience. Some of Australia’s freshest seafood will be showcased across an oyster station; an ice bar featuring salmon and scampi caviar; and a crudo island with kingfish, snappers and tuna on display. Patrons will also be able to sample premium charcuterie across an artisan cheese grazing table as well as a cured meats stall. The immersive hot kitchen will also complement the meat offering with beef carving, hollandaise trouts, and duck displays. On offer throughout the evening will also be five of Silvester’s most renowned and exquisite delicacies which have earned the venue its chef hat.

For those with a proclivity for all things sweet, exquisite treats will be offered from an interactive futuristic pastry lab as well as a live dessert and liquid nitrogen station adorned with a large life-sized bespoke chocolate centerpiece, crafted specifically for the event. Guests will also be the first to witness the unveiling of an intriguing, never-before-seen dessert to mark the special occasion.

A night is not complete without premium Australian drops The diverse and scrumptious food offerings will be complemented by roaming tray service of some of Australian’s most premium wines (topped up throughout the evening) as well as specialty digestifs crafted by their awardwinning beverages team. A grand, striking wine fountain will also adorn the central island at the heart of the event.

Live jazz entertainment To truly bring the experience to life, the swinging soirée will be vivified with live jazz musicians and vocalists, performing some of the prohibition-era crowd favorites throughout the evening.
