Sustainable Seafood Galore at cafe TOO

cafe TOO will add an array of sustainable seafood dishes to its dinner buffet this July, featuring one highlighted catch every night throughout the week. The sustainably caught seafood offerings include live abalone, local giant grouper, New Zealand diamond clam, Nova Scotia lobster and many more.

Summer Palace Classics

Summer Palace brings back some of its classic dishes throughout the past 28 years. Highlights of the revival include Double-Boiled Diced Seafood in a Papaya, Stewed Ox Brisket in Bouillon and Scrambled Egg White with Diced Scallop and Coral Crab. Savour these familiar flavours at Summer Palace until the end of July.

Australian Blue Mussels at Waterside Terrace 

Blue mussels never tasted so good.  Throughout July, Waterside Terrace will introduce organic and sustainable blue mussel dishes cooked in various Thai styles and teeming with flavours, such as stir-fried with red chilli and chilli paste; with Thai coconut sauce and lemongrass; and in Thai red curry stew with Thai basil and pineapple.

Chanterelle Mushroom at Lobster Bar and Grill 

Chef Kenny Chan at Lobster Bar and Grill has crafted a seasonal menu using the exquisite Chanterelle mushroom freshly exported from Europe. Enticing dishes include Sauteed Chanterelle with baby Romaine lettuce, crispy bacon and poached organic egg; Orecchiette pasta with Chanterelle and chicken ragout, arugula leaves and crushed walnuts; Pan-seared French John Dory with Chanterelle, purple gnocchi and vin jaune sauce and many more.

Japanese Eel at Nadaman 

Chef Takatsu Koyama uses the seasonal freshwater eel from Japan and turns it into a masterful Kaiseki menu which will only be available this July. The multi-course Kaiseki menu consists of moreish dishes paired with exquisite presentations that best represent the produce and the season. Highlighted dishes include Half-broiled eel and vegetables cooked in a hot pot; Grilled eel with salt served with fresh wasabi; and many more.

Mango and Berries Afternoon Tea at Lobby Lounge 

Lobby Lounge presents a quintessential afternoon tea. Guests can indulge in a refreshing Mango and Berries Afternoon Tea Set with new items, such as Mango caramel tart, Strawberry and lemon eclair and Mango scones, just to name a few. Add a glass of bubbly for the ultimate indulgence.

Cake of the Month at Island Gourmet 

For the month of July, Area Pastry Chef Alain Guillet has chosen exotic and refreshing flavours of zesty lemon to create the Cake of the Month – Menton. This summer-inspired cake is filled with coconut biscuit, lemon ginger cream and a light lemon mousse.
