Pan-fried King Scallop (HK$188 / person) – Executive Chef Suen specially crafts the dish with a unique “East-meets-West” technique to surprise your palate. The King Scallop is seared with our homemade egg white batter, delivering a crispy texture on the outside while retaining ultra-juiciness on the inside. The umami and sweet tastes of the scallop is elevated with a touch of specially-made Teriyaki sauce. Steamed Egg with King Scallop and Crab Meat (HK$188 / person) – Steamed egg is a traditional family dish in Chinese culture. Chef Suen has elevated the dish with premium King Scallop. Right temperature control is the essense in delivering perfectly balanced scallop, bringing you an unforgettable umami flavour with silky steamed egg beneath the seafood that has absorbed all of the sweetness!

Sautéed King Scallops and Asparagus with Assorted Fungus and Fresh Lily Bulbs (HK$538 / standard portion) – Named as “Yu Ji Gat Coeng”, the dish symbolizes luck and happiness in Chinese. Fungus is added not just for its flavour, but also for its high amount of iron and vitamins, which is good for nourishing skin and anti-aging. Savour this opulent delicacy along with the tender King Scallops, asparagus and fresh lily bulbs to immensely satisfy your taste buds and pamper your body this season!

Crave for Sumptuous Kanto Sea Cucumber

Sea Cucumber is also known as the Ginseng of the sea with its high nutritional value and low cholesterol content. Chef Suen has chosen Kanto Sea Cucumber, as it is one of the best sea cucumbers in Japan. It has a delicate appearance and soft spines on its surface in crafting tantalizing yet nutrimental delicacies.

Deep Fried Kanto Sea Cucumber stuffed with Shrimp Paste and Abalone (HK$360 / person) – One of Chef Suen’s favourite dishes called “Bao Ji Cing Sam”, meaning everything will go on well as wished in Chinese. The dish requires Chef Suen’s delicate craftsmanship in stuffing a whole abalone and shrimp paste into the delicious Kanto Sea Cucumber. It is then seasoned perfectly and deep fried to deliver complex layers of flavours and textures. Enjoy it with our homemade Sichuan sauce made of bean paste, sweet and sour mix, and spicy pepper oil. You will definitely be surprised by the tingling spicy notes on the palate. Indulge in the exceptional flavour full of healthy nutrients for a delightful dining experience.

Braised Kanto Sea Cucumber with Dried Pomelo Peels (HK$300 / person) – Sea cucumber is one of the most delicate and complicated ingredients used in Cantonese cuisine. It requires multiple bathing times, soaking and simmering until it is soft enough to absorb the flavours from ginger, onion and flounder. Dried shrimps, garlic and flounder are added in braising the pomelo peel to enrich the flavour of this traditional dish. Homemade oyster sauce is also added to whet your appetite with sublime layers of heavenly aromas!

Double-boiled Whole Kanto Sea Cucumber Soup (HK$360 / person) – Don’t forget to savour the premium Kanto Sea Cucumber Soup that matches perfectly with Matsutake, which is also known as King of Fungi. Its heartful aroma further elevates the taste of the sea cucumber, filling your mouth with delightful aromas. Recommended by Chef Suen, red dates and goji berries are specially added to nourish our guests in spring.
