Milk & Honey, Israel’s first-ever whisky distillery, is giving whisky lovers worldwide a chance to own a piece of Israeli history by purchasing a full-sized cask of its earliest edition whisky. The 200-liter, ex-bourbon casks are limited edition and can be purchased as a collector’s item, a business proposition, a historical heirloom or a special gift.

 

Upon purchase, casks are filled with new-make, sweet single malt, and placed in the distillery’s cask room where they are closely supervised by Head Distiller Tomer Goren over the course of three or more years. Cask owners can visit the distillery at their own convenience to check in on their barrel, and taste and feel how it is a developing. After three years, owners can decide, in collaboration with the Head Distiller, whether to bottle the cask or allow it to continue aging, and can even design their own logos or signage for their custom bottle. After three years, each cask will yield hundreds of bottles (700mL each), which can be gifted or even re-sold at a significant profit margin.
Payment is provided in two installments: the first installment of 11,111 ILS is paid upon signing, while the second (a service charge of 57 ILS for each 750mL bottle) will be payed on bottling day. The total cost amounts to 35,000 ILS (not including tax), which, when divided by the number of bottles it yields, is incredibly cost efficient for the historic, 46% abv spirit.

The distillery has already released Israel’s first-ever single malt whiskey in “Experimental Editions” to give eager onlookers a chance to taste the make, even in its infancy.  Experts across the world have been impressed by the rich, complex maturity of Milk & Honey’s young whisky, qualities that have been attributed largely to Israel’s hot & humid climate speeding up and improving the aging process.
