Radisson Blu Plaza Hotel Sydney’s Fax Bar launches new Exotic Spice Market A chance for Sydney to explore Sub-continental Indian cuisine beyond the beloved butter chicken

Radisson Blu Plaza Hotel Sydney is launching an exotic August/September Spice Market Dining menu for diners and guests to enjoy at The Fax Bar, with combinations of flavours and spices that dance on the tongue.

Already renowned for their high quality and seasonal menu offerings, Radisson Blu Plaza Hotel Sydney in-house chefs wanted to create some dishes that allow them to pay homage to their hometowns, but bring exotic spices to life in Australia. The ‘Old Spice, New Flavour’ approach means national dishes from Nepal, India, Bhutan and Malaysia get to see light in Australian dining settings so that people can be taken on new culinary journeys.

All dishes are prepared fresh on-site, with dishes such as Dahi Puri (crispy spiced potato puffs with tangy chutney), Masala Papad (veggie spiced lentils with pappadum), Prawn Moilee (grilled prawns with coconut sauce) and trio of samosas with mint chutney. For the less adventurous, there are traditional dishes with new twists, such as steamed chicken dumplings with tomato chutney and butter chicken served with green pea rice.

Executive Chef Oswin Ribeiro wanted to create a menu beyond ‘typical Asian dishes’ such as butter chicken or hot chilli curries, and use unfamiliar, exciting, and exotic ingredients that are tantalizing to everyone. Dishes were selected based on cultural significance to our chefs and the ability to put modern twists on dishes to please every diner. Head Chef Ribeiro said, “I wanted to bring the taste of Sub-Continental India to the table to show the vast range of cuisine beyond the ordinary, without being too daunting to try.”

The hotel is proud of their newest bar dining menu, striving to provide a seasonal, exciting menu that invites guests in to try something new, where the culinary experience doesn’t end at the meal.
