Greater China Club’s modern European dining room Cadenza presents classic French bistronomy this summer, introducing a unique showcase of southern French cuisine by new Japanese Executive Chef Kawabata Masahito from Okinawa. Chef Kawabata Masahito’s distinctive cuisine brings the French fine dining style of eight years’ experience at Michelin-starred kitchens including Le Saint-HonoreBarbacan, La Caunette, Faucet and Master Chef Hubert Keller’s celebrated Fleur de Lys.

The talented chef brought a flavour of his cooking during a pop up promotion at Cadenza earlier this year – and now returns by popular demand. Epicureans are invited to indulge in his French bistro cuisine on his exquisite set lunch and set dinner menus, and a la carte dinner menu.

Chef Kawabata Masahito’s a la carte menu features his renowned signature dishes – including his reinvention of traditional Burgundy classic appetisers of Snail and Spinach Croquette on a bed of Braised Mushrooms (HK$138 for members and HK$158 for non-members); an extraordinary combination of Caramelised Terrine Foie Gras with Stewed Eel with Oriental Spices (HK$198 for members and HK$218 for non-members); classical main dishes of Stewed Veal Sweetbread with Mushrooms and Vegetables in Madeira Wine Sauce (HK$198 for members and HK$218 for non-members), Braised Snapper Fillet in Bouillabaisse Broth (HK$218 for members and HK$238 for non-members),  Roasted French Duck Breast served with Pinot Noir Wine Sauce with Herbs (HK$218 for members and HK$238 for non-members).

Other all-time favourite desserts feature Profiteroles served with Hot Chocolate Sauce, Caramel Ice-Cream (HK$68 for members and HK$78 for non-members) and Profiteroles served with Hot Chocolate Sauce, Caramel Ice-Cream (HK$68 for members and HK$78 for non-members).

The impeccable tasting dinner menu is priced according to choice of main course, starting with appetiser options of Southern French-style Sea Bream Carpaccio with Ravigote DressingGarden Salad with Grilled Goat Cheese, Noisette Oil and Mustard Vinegar DressingMarseille-style Fish Soup with Garlic Toast and Rouille or Caramelised Terrine Foie Gras with Stewed Eel and Oriental Spices (for an additional HK$50).

Main course choices are Braised Snapper Fillet with Bouillabaisse Broth (HK$450 for members and HK$480 for non-members), Roasted French Duck Breast in Cassis Sauce (HK$450 for members and HK$480 for non-members) or Stewed Beef Cheek in Red Wine Sauce (HK$480 for members and HK$520 for non-members). Completing the menu is ‘Cheese of the Day’, with two selections fromEpoise, Blue De Bresse or Chaource, and ‘Dessert of the Day’ choices of Nougat Glacee or Mille Feuille.

Tasting lunch set is also priced according to main course option, with a wide choice of appetisers and mains, changing weekly to put seasonal and fresh ingredients into the spotlight on the rise. Dessert of the day is an additional HK$20, with coffee or tea.

“Chef Masahito’s unique style of Michelin-level French fine dining extends our mission to bring best dining experiences from around the globe to Hong Kong,” said Greater China Club founder and CEO Eric Ting.

On graduating from culinary school, Chef Masahito embarked on an eight-year pilgrimage studying under some of France’s most renowned Michelin-star chefs, before establishing his name in Okinawa with a distinctive French-Japanese style cuisine.

“At Cadenza, I hope to showcase a healthy Mediterranean style of southern France,” Chef Masahito said. “Along with traditional French desserts, I hope to bring a homely, back-to-nature bistronomy approach twinned with elegant presentation.”

To further enhancing guests’ dining experience, The Kalita Wave drip coffee system is also newly-launched at Cadenza, introduced at a special price of HK$48 (original price HK$68), or extra HK$20 with set lunch or dinner.  The renowned brand’s drippers maximize evenness in coffee extraction, with uniform brewing for the quality of the coffee to shine through. A choice of four top quality coffee beans is offered: Colombian from South America, Mandheling from Indonesia, Yirgacheffe from Ethiopia and Guatemalan from Central America, promising a perfect after-meal coffee.
