Mode Kitchen & Bar is delighted to launch their Festival of Truffle campaign to celebrate the start of the indulgent Australian truffle season, under Head Chef Francesco Mannelli (ex. Balla, Est. and Uccello).

The commencement of the cooler months coincides with the flavoursome and fragrant season of truffle harvest, winter’s most treasured ingredient. To welcome the return of this culinary sensation, Mode Kitchen & Bar will be hosting their much anticipated Festival of Truffle, from June 19 until mid-August.

Throughout this celebrated period, curious diners and truffle enthusiasts alike can find their oasis at Mode Kitchen & Bar with the launch of their exclusive 3-course Truffle Tasting Menu. Guests will be treated to a menu that highlights the rich and unique ingredient, complimented by the finest seasonal produce, consistent with the very foundations at the core of Francesco Mannelli’s kitchen. These captivating dishes include:

  • Seared scallops, celeriac, hazelnuts & black truffle
  • Grass fed carpaccio, gruyere, artichokes & black truffle
  • Grilled spatchcock, shitake mushrooms & black truffle
  • Beurre bosc pear & black truffle financier

In addition to the flavoursome and tantalising dishes, Mode Kitchen & Bar has crafted perhaps their most daring creations yet – truffle-infused cocktails for the truest truffle aficionados. The traditional martini has been transformed into the ‘black truffle’, and espresso martini lovers can delight with the truffle-infused take on the classic. Guests can also enjoy a ‘Black and White Negroni’.

For those wanting to simply indulge in the à la carte menu, the decadent Signature Truffle Risotto, regarded by many as “the best risotto they have ever tasted” returns. Alternatively, guests can add truffle additions to regular dishes with the option of a ‘truffle infusion’ – highly recommended by Head Chef Francesco Mannelli with his sumptuous smoked burrata.

Truffle season is a highly anticipated time of the year for Francesco, and one kept close to his heart. He reflects, saying:

I have fond memories as a child growing up in Florence hunting truffles with my father’s friend and his dog in San Miniato, a famous truffle town. The dog would sniff out the most spectacular truffles – but we had to be quick or he would eat them himself!”
