Set on Hainan island’s beautiful shoreline, eco-conscious luxury lifestyle destination 1 Hotel Haitang Bay, Sanya – the first Asian destination from US-based 1 Hotels – is pleased to welcome Sky Bar, an alfresco cocktail lounge and the newest addition to the hotel’s collection of sustainability-driven food and beverage outlets. Launched in partnership with Hope & Sesame – No. 36 on Asia’s 50 Best Bars 2020 and named DRiNK Magazine’s Sustainability Award in 2019, Sky Bar presents a sustainability-centered cocktail menu that celebrates the local ingredients and flavors of Hainan.

Committed to sustainable practices and taking diners back to nature, 1 Hotel Haitang Bay, Sanya’s culinary program is built around slow food and farm-to-table movements, with the aim of forging strong connections between people and the natural world through what we eat. From the use of locally-sourced ingredients to guest experiences, Sky Bar implements eco-conscious initiatives with the goal of reaching zero waste in the near future.

Sky Bar’s menu presents an array of cocktails that shine a light on Hainan’s indigenous produce and flavors while minimizing the carbon footprint from transportation. Fresh strawberries, watermelon, basil, mint as well as native ingredients like yellow passion fruit and prickly pear are harvested from local farms and combined with unique Hainan beverages including Xinglong coffee, baijiu and sweet potato liquor. In a bid to minimize food waste, leftovers that are typically discarded such as pineapple pulp and watermelon rinds are incorporated into the cocktails, composted or used as livestock fodder at the hotel’s farm.

On the selection of liquor, Sky Bar uses spirit brands with fairtrade and Sucrbon certifications and share their eco-conscious values such as Flor de Caña. The bar will also be the first in Hainan to partner with ecoSpirits, a zero-waste bottling service geared towards ending single-use glass by swapping out traditional 750ml size wine bottles for 5-liter reusable containers.

Other environmentally-friendly initiatives also encompass coating-free paper straws, tissues made with recycled fiber, and handy tips and reminders to educate guests and staff to reduce waste. In the future, there are plans to introduce water-reduction taps to lower water and electricity consumption.

Sky Bar intends to offer guests an opportunity to discover the indigenous crops and herbs from Hainan’s distinct terroir at 1 Hotel Haitang Bay, Sanya’s own off-site farm Sunshine 18 Degrees. Here, guests can taste a variety of fruits, vegetables and herbs incorporated in the cocktails.

Farmer’s Delight

A delightful celebration of local fruits and vegetables, the vodka-based cocktail is made with fresh passion fruit juice, Aperol and orgeat syrup, topped with muddled cherry tomatoes and strawberries for notes of refreshing umami.

That Prickly Mojito

Hainan’s interpretation of the Mojito shines with a touch of Shan Lan Yu Ye baijiu. The classic is invigorated with cucumber, lime and colorful prickly pear.

Island Old Fashioned

A delightful Old Fashioned with strong Southeast Asian influences. Kavalan whisky is aged in a coconut, infusing the spirit with the fruit’s inherent nutty sweetness, thereby reducing the need for artificial additives. House-made salted pandan syrup complements the whisky’s spicy notes.

Xinglong Tiki

Locally-grown organic coffee from Xinglong , Flor de Caña Spresso, a dry coffee liqueur made with 7 year-aged rum is topped with spiced banana and golden pineapple for a joyful Hainan island experience.
